I get a lot of cravings but today I not only was “itching” to get into the kitchen but also Jack requested a chocolate cheesecake treat and who could say no to Oreo cheesecake bites?! That is exactly what I made and it definitely cured the baking and sweet tooth craving. I recommend this recipe just beware that you may eat the whole pan in one night 🙂
Ingredients:
The crust
22 Oreo cookies
2 tbsp. unsalted butter, melted
The filling
1 1/2 packages cream cheese, at room temperature
1/2 cup granulated white sugar
1/2 cup sour cream
1 1/2 tsp. vanilla extract
1/2 tsp. salt
2 large eggs, at room temperature
10 Oreos
Preheat the oven to 325 degrees F and butter an 8 x 8 baking dish.
Place 22 Oreos in the food processor and process them until they are finely ground. While the food processor is still running, slowly add the butter into the mixture until all the crumbs are well moistened. Place the crumb mixture in the baking dish and spread evenly. Place in the preheated oven for 10 minutes.
Roughly chop the final 10 Oreos in the food processor.
In a large bowl (or stand mixer) beat the cream cheese and sugar on medium speed until well blended-can take about two minutes. Scrape down the sides and bottom of the bowl and beat once more until completely blended. Add the sour cream, vanilla, and salt and beat until combined. Add the eggs one at a time beating well in between each egg. Finally, gently stir in the roughly chopped Oreos into the mixture.
Pour the mixture over the crust and bake in the oven for 30-35 minutes or until the middle is firm. Cool for minimum 3 hours and for best results overnight.
